| Winemaking | After a manual harvest, the beans are carefully separated from the stalk by the grinder and later sent to stainless steel tanks. Alcoholic fermentation is carried out through selected yeasts, for 7 days, with frequent pump-overs at a controlled temperature between 26°C and 28°C. Maceration continues for about 10 days. |
